This is one of my favorite Italian "soul" foods (aka breakfast). Simple and nurturing. For my husband Joe's Valentine's birthday, I made a different torta della nonna, one my grandma made (she called it "dopo scuola dolce"), a simple cake made with lemon zest and olive oil. But there's a birthday cake that you've made for Stefano, a recipe of his Mom's, that is light and sweet and a perfect dessert after a big meal. I seem to recall it can be made in a larger cake pan, to serve a crowd. Is this a recipe you'd share some day? Of course it's my goal to cook, bake, and remodel, ala Cara & Stefano.

I think the cake you are referring to is "pan di spagna," a sponge cake made with just flour, eggs, and sugar - no liquid or leavening agent. It’s the base for the birthday cake that Stefano’s mom makes.
The cake is often sliced in half horizontally and dampened with sugar syrup, fruit juice, coffee, or liquor. Then, a layer of pastry cream is spread between the two layers, and the entire cake is covered in freshly whipped cream.
I don’t think I’ve ever posted a recipe for pan di spagna, but I will make a note to do so! In the meanwhile, you can find many good recipes on the internet.
It warmed my heart to read your comment about the bars and restaurants “in our town of Montalcino” …. You have made that mental crossover to belonging to your new city. ❤️
